NOODLES WITH CREAMY TOMATO
HEMP SAUCE
THIS IS VEGAN FAST FOOD FOR THE WHEN YOU NEED HEALTHY FOOD FAST

I made this last night, totally cheating with ready made sauce and dip. And I was amazed how good it was. I recently discovered hemp seeds and try to use them often due to their high iron content. I mixed in about 20 grams of vegan cheese which gives it the creaminess. And lots of fresh basil. YUMM!
This recipe makes 1 portion.
INGREDIENTS

I jar of pasta sauce, you only need 250gr for 1 portion

4 baby tomatoes, halved
-
20 gr of vegan cream cheese, my recipe is coming soon!

1 TB (tablespoon) of hempseeds
-
2 TB eggplant/capsicum dip
-
1 small chilli
-
2 cloves of garlic
-
handful of fresh basil
-
pinch of salt
-
rice noodles
FRY HEMP SEEDS, GARLIC AND CHILLI

heat 1 TB olive oil and fry hemp seeds garlic and chilli until it starts to brown slighlty
ADD HALVED TOMATOES

fry the tomatoes for 1-2 minutes
ADD THE REST

add 2 TB of the dip

250 gr of pasta sauce
-
20 gr sliced vegan cheese
-
pinch of sea salt
-
and stir to melt the cheese
CHOP BASIL
-
I know some people will cry that I chop the basil with a knife, but I did not have time to shred this much basil by hand (too hungry...)

roll the leaves up and chop it

tasted great to me :)
STIR TO DISSOLVE CHEESE

stir the sauce until the vegan cheese is melted into the sauce

add your chopped basil
THROW NOODLES INTO PAN

cook rice noodles to your liking and rinse under cool water to get rid of the starches

if you like gf pasta, it would work too
-
I can't get used to gf pasta and always eat rice noodles instead
-
strain noodles and add them to the pan to mix and re-heat
