I am BACK-

Dear friends, a lot has happened since my last post in December: I started selling a vegan and gluten-free flour mix across organic markets in Sydney and set up an e-shop and an ebay shop. This helps all of you who are not into weighing flours and who want to avoid shopping for ingredients.

However, the Virus has changed our lives.

We have TIME in isolation at the moment and we can shop for ingredients online or at least find suppliers online and then make it our exciting outing for the day to ride our bicycle to the shop to purchase missing ingredients...Here is your challenge: I have adjusted my recipe for brown bread (which is still my favourite), to show you how to make your own red rice flour. Get your self organised with hardware and ingredients and give it a go. You will be thrilled pulling your first home made GF and Vegan bread loaf out of the oven! Let me know how you are going with your baking results and remember, that flours vary from every supplier and even water PH levels and hardness is different in every country. This means you start experimenting and writing down the exact amounts you use if they are different from mine. If the bottom is doughy and not quite cooked, reduce water by 2 tablespoons at a time and so on. My recipe is a good starting point and you can start playing with the ingredients. I once even baked it with sunflower oil instead of olive oil and lemon juice instead of apple cider vinegar. Everything is possible!

Stay inside and make a few new friends: your oven and homemade GF bread-

Happy baking!
