Fried Rice Meal Prep

I recently realised that meal prepping is super convenient, not only for people who like to take their own lunch to work, uni or school, but even for people who work from home and are food bloggers. It means I don't have to look at the photos I am taking and get super hungry without being able to eat the meal. I have learnt my lesson: never take photos of food with an empty stomach! (having eaten several meals thinking I had the photo I wanted, eaten the meal and then realised that I forgot something...)

So why not meal prep with your friend or partner, make 5 meals each and swap them. Here is my plant-based fried rice for healthy meal prepping. I ate it for 5 days, just changing the toppings slightly, from peanuts to sesame seed, sweet chilli sauce or chilli jam etc.


From this huge pile of veggies....

to a delicious filling meal, covered in home made and super easy sugar-free sweet chilli sauce!
