5 minute noodle soup


You don't have much time but want a super healthy lunch in minutes? Here it comes.... I eat this soup possibly 4-5 times a week, with different veggies and noodles to change it slightly. This recipe is my favourite combination. I also make sure I buy rice noodles and not bean thread, which makes a small difference. If you can only find bean thread vermicelli, it will do... When I come across a well stocked asian supermarket I buy lots of different noodles and all sorts of colours and shapes to fill up my pantry-
