Green Potato Curry


This curry is easy, fast to make and super filling. Perfect for lunch and you wont feel hungry till your light evening snack. If you cook this meal the day before, it even tastes better, which makes it an ideal lunch on the go. All you need is a microwave to heat it up.

I use a ready made curry paste which is a flexitarian option due to containing some shrimp paste. If you can purchase a plant based curry paste you have a delicious 100% plant based meal.
