NOODLES WITH CREAMY BROCCOLINI OR CAULIFOWER HEMP SAUCE
THIS IS VEGAN FAST FOOD FOR THE WHEN YOU NEED HEALTHY FOOD FAST

I am working on Fast Food recipes at the moment and this one reminded me of a creamy pasta sauce I used to love before I quit dairy and gluten. It is really quite creamy! I added hemp seeds again, fried mushrooms and peas.
And the unavoidable sprinkle of chilli flakes :)
It is delicious with broccolini and cauliflower, I could not decide which one i preferred-
It is a mild sauce, beautiful by itself. Chilli flakes are not necessary.
This recipe makes 1-2 portion.
PREPARE BROCCOLINI
-
chop the broccolini in pieces and add to food processor
-
blitz until fine
-
nuke in microwave, covered with a plate for 8 minutes
OR PREPARE CAULIFLOWER
-
cut florets in smaller pieces and blitz them in a food processor
-
add cauliflower to a microwave safe bowl, place a plate on top
-
steam it in the microwave for 8 minutes
-
no water needed
INGREDIENTS FOR SAUCE
-
the amount of the ingredients can be a little flexible, simply adjust the consistency by adding more or less stock
-
for this sauce I used the following amounts:
-
50 grams broccolini, steamed
-
50 grams vegan cream cheese, click here for my recipe

2 heaped TB (tablespoons) hemp seeds
-
1/3 -1/2 cup vegetable stock, more if needed, depending how liquid you like your sauce, click here for my stock recipe

1TB vegenaise, click here for my vegenaise recipe

pinch of sea salt
ADD TO A FOOD PROCESSOR
-
simply add the above ingredients to a food processor and pulse until it reaches your desired consistency
-
start with 1/3 cup of stock
-
add more stock tablespoon by tablespoon
FRY MUSHROOMS
-
fry 50 grams of sliced white mushrooms
-
to avoid too much oil I fry them in water until they have shrunken
-
strain them and return them to the pan
-
fry them in a bit of olive oil until they start browning
SERVE WITH STEAMED PEAS
-
steam 50 grams of peas in the microwave
-
cook the rice noodles to your liking and rinse them in cold water until they are loose and not sticky anymore
-
add the noodles and sauce to a large pan and warm everything up
-
serve with the fried mushrooms and peas
-
and if you are a chilli-holic, like me, sprinkle some chilli flakes over it
