BURRITO BOWL

WITH HIDDEN WRAP

This recipe was created after I took a bite out of the burrito wrap. I was shocked how such a yummy looking wrap could be so hard to eat. Of course the problem was the wrap. The cardboard taste needed to be fixed :)

THE WRAP VERSION

  • I could not eat the wrap this way even though the filling was amazing-

  • I decided I needed to come up with a version that did not make the wrap the hero, but hide it in the meal

BLENDING THE WRAP

  • this huge flavourless circle of bread had to be chopped up as small as possible

  • I ripped it into pieces and turned the blender on: perfect shredding...

  • I shredded 2 wraps for 3 servings

AROMAS ARE NEEDED

  • I did not want to throw away the wraps, but certainly did not want to taste them

  • some strong aromas are needed to distract from the flavour -

  • I decided on chilli, ginger, red onion and garlic

  • for 3 servings use

  • 1 large red onion, chopped small

  • 3-4 cloves of garlic (10 grams)

  • 1 small red chilli, chopped by hand

  • 1 TB (tablespoon) freshly grated ginger

FRYING THE WRAP WITH AROMASTICS

  • heat 1-2 TB (tablespoons) olive oil in a large frying pan

  • add all the chopped onion, ginger, garlic and chilli and fry on medium until the onion is starting to become translucent and the bread is starting to turn brown and crunchy 

  • remove from pan and set aside to cool

CREATING THE BURRITO BOWL

  • decide weather you like to eat the bowl hot or cold. I use this meal as take away a lot, which means it is cold

  • easy to prepare at night and take to work the next day

  • if you want to use rice, cook some basmati rice to your liking 

  • if you cook raw black beans, keep in mind that they need to cook for about 50-60 minutes 

  • if you want to eat this meal warm, just time all the cooking so that everything is cooked and ready at the same time

  • I usually make 3 portions and my base is 3 cups of cooked black beans mixed with 3 cups of cooked basmati rice

  • divide the bean/rice mix into 3 bowls 

  • add a third of the fried wrap and onion/ginger/chilli/garlic mix to each bowl 

  • add your preferred veggies

  • corn, canned (drained and rinsed) or cooked from scratch

  • chopped tomatoes

  • sliced avocado

  • fresh coriander

THE SAUCE

  • this sauce  is the hero! 

  • ingredients for 3 servings

  • 1/2 cup vegenaise, bought or make your own, follow my easy recipe here

  • 1/2 TB (tablespoon) chilli jam or sriracha sauce, check out my home made sugar free chilli jam here

  • 2.5 TB lemon juice

  • 1.5 tea (teaspoons) smoked paprika powder

  • 1/4 tea sea salt

  • 1/4 tea chilli powder

  • add all ingredients to a jar and blend with a stick blender or use a whisk

SERVE

  • drench the bowl in sauce and add some fresh coriander on top

  • if you like it really saucy, the sauce may only be enough for 2 portions

  • start with the recipe as is, and if you want more sauce just double it
