Plant-Based Minestrone
Prepared in Slow Cooker

I love my veggies when they are slow cooked and ready in the morning without doing very much at all.
I made a minestrone with lots of spices and herbs and you will not miss any large bones in the soup...
Perfect for breakfast or to take to work for lunch. I chop everything up, add it to the slow cooker and set it on low.
It is done between 8-16 hours, depending on your veggies. I once forgot to parboil my waxy potatoes and it took 16 hours to get them soft. If you boil them for about 5-8 minutes before adding they are cooked after 8 hours.
Ingredients
amounts for 3 servings:

3 potatoes, par boiled a few minutes, depending on the variety. Waxy potatoes about 5-8 minutes.

3-4 carrots
-
2 onions
-
20 gr garlic
-
1 handful sugar snap peas
-
1 handful green beans ​

1 red capsicum
-
2 x 400 gr diced tomatoes
-
1 can red kidney beans, drained
-
1 can cannellini beans, drained
-
spice/herb mix
-
bouillon

I make a large batch of bouillon every few weeks, due to using it in a lot of recipes

1/2 TB fresh rosemary, very finely chopped

1/2 tsp ground coriander
-
1/2 TB dried basil
-
1/2 TB dried oregano
-
1/2 TB dried thyme
-
1/4 tsp sea salt
-
1/2 TB + 1/4 tsp dried chili flakes
-
fresh parsley to serve (optional)

Process
-
wash, chop, clean, peal and slice all the veggies

parboil potato pieces so they are just starting to soften, which depends on the variety. check them after 3 and 5 minutes, very waxy varieties like Kipferls may take 8 minutes, depending on the size of the pieces
-
I "de-string" the sugar snap peas, by pealing the strings off on each side.

add all ingredients to slow cooker

add 4 cups of water
-
stir
-
turn on low and cook for 8 hours
