you can add all sorts of yummy things as toppings, like chopped peanuts, pickled ginger etc.

Looking at rice and veggies you might think "booooring" -

but wait till you try this bowl. 

The flavour will send your taste buds to heaven!

 

It's about the sauces!

below are the ingredients for the main sauce

Chop and Slice

amounts are totally up to you

​

  • thinly sliced red raddish

  • julienned carrot

  • small cubes of cucumber

  • small cubes of  avocado

  • thinly sliced red cabbage

 

the raw red cabbage will be mixed with the luke warm rice and all other veggies go on top of the bowl

Fry Mushroms

  • I fry enoki mushrooms in a little olive oil until they are soft

Prepare Rice

  • I use 1/3 red rice and 2/3 brown rice

  • my favourite method to cook this rice is the absorption method, all up it takes 50 minutes to cook the rice, plus cooling down

  • you don't want the rice to wilt the red cabbage, so cool it to luke warm temperature

  • to get the consistency right, I weigh the rice and the water

  • use 200 gr brown rice, 100 gr red rice and 600 gr water

Chop Mint and Coriander

  • I am happy to eat the stems  and roots of coriander, but discard the mint stems

  • just chop the coriander stems really thinly

The Base

  • add luke warm rice and sliced cabbage to a bowl and mix well

Main Sauce

​amounts required for 2 portions of sauce:

  • 1/4 cup gluten-free tamari

  • 1 TB (tablespoon) sesame oil

  • 3/4 TB minced fresh garlic

  • 3/4 TB grated fresh ginger

  • 1 tea (teaspoon) each black and white roasted sesame seeds

  • pour the ingredients into an empty, clean pickle jar and use a stick blender to mix it

  • in this photo I have poured the sauce onto the rice and cabbage mix

  • I use 2-3 TB of sauce on 1 portion

Second Sauce to Drizzle on Top

  • home made vegenaise, check my easy recipe here

  • sriracha sauce

  • use 1-2 TB per person of vegenaise and spice it up by mixing 1/2 teaspoon or more into the vegenaise

  • instead of sriracha, you could use wasabi paste, also delicious!

  • adjust the amounts of spice to your liking

Assembly

  • the rice and cabbage with the main sauce are in the base of the bowl

  • add reddish, carrot, avocado, cucumber and enoki mushrooms to the top

  • sprinkle with chopped herbs

  • sprinkle with roasted white and black sesame seeds

  • add sriracha vegenaise drizzle sauce

  • add chopped roasted peanuts, optional

  • add slices of pickled ginger, optional
