Klaus's Baltic Cabbage Stir Fry
Klaus, my dad, pictured here with my mum Antje eats a proper healthy lunch every day,
no matter what and where!
So he surprised me last week with this incredible cabbage stir fry with boiled potatoes on board of his boat "Wiebke" in the middle of the Baltic.
You need to taste it to believe it! It is the first time in my life I actually loved cabbage ....
and there is a secret ingredient!
Welcome in Klaus's Kitchen:
It is not the most attractive looking meal, I must admit, but ignoring that, I could eat a kilo of it right now.
To me it is only about the taste and that it is healthy and filling, and this ticks all the boxes!
Ingredients
amounts for 3 servings:

1/2 a white cabbage

2-3 carrots
-
1-2 onions
-
1-2 cloves of garlic
-
waxy potatoes for boiling, 2 large ones per person
All the amounts can be adjusted to your level of hunger...
I am getting used to eating onions and garlic in Germany, they don't seam to be able to cook without them!

Secret Ingredient
for the "Sauce"

Klaus uses sunflower oil and his secret ingredient: indian curry powder, 1 heaped tablespoon

plus about a 2-3 tablespoons of tamari
Peal Potatoes and Wash Veggies

the boat goes on auto-pilot and Antje starts prepping the veggies
Chop Cabbage

Klaus chops the cabbage, in a certain tray to avoid spillage on board...
Oil/Curry Paste

use approximately 1/3 cup of sunflower oil

add 1 heaped TB indian curry powder

stir until combined
-
heat this mix on medium high and add your chopped veggies
Stir Fry Veggies

keep stirring on fairly high heat until everything reaches the desired softness

in the meantime start cooking your pealed potatoes by adding them to cold water with a teaspoon of salt

once potatoes come to a boil, simmer for 20 minutes or until soft

add 2-3 TB of tamari or gf soya sauce to the stir fry and mix it in well
Serve!

we ate it with boiled potatoes, but I can imagine it would be nice with rice too.
