Fresh Springrolls

A very simple and refreshing snack, that is incredibly delicious with the peanut and lime dipping sauce.
And I finally worked out a way to fold the rice paper without tearing it.

Ingredients
-
fresh coriander and mint
-
mushrooms, I love king oyster mushrooms sliced lengthwise and fried until soft
-
red capsicum
-
cucumber
-
cooked rice vermicelli
-
homemade peanut butter dipping sauce
-
rice paper


Peanutbutter Dipping Sauce
-
I use my stick blender to get this smooth
-
for 1 serving use the following amounts
-
I use a jar big enough to fit my stick blender into it
-
add 2 TB (tablespoons) peanut butter and 2 TB water to the jar, then add
-
1 tea (teaspoon) gf soya sauce
-
1 tea sriracha sauce
-
1 tea lime juice
-
1 drop of stevia or 1/16 tea of ground stevia powder
-
blend until smooth and adjust spiciness to your licking

How to deal with Rice Paper
-
take half or a whole rice paper round, depending on how big you want them
-
prepare your bench by lying a clean dry towel on the bench near the tap
-
rinse your rice paper under the running tap, until just wet on both sides and quickly lay it onto the towel
-
do not try to move the rice paper anymore as it will most likely tear



Process
-
you need to fill and fold your rolls where you placed them
-
just wait 1-2 minutes and they will be soft enough to fold

Assembly
-
place your cooked rice vermicelli, fried mushrooms, sliced capsicum, cucumber and fresh herbs onto the rice paper roll


Folding
-
I fold the sides in first and then roll up from the bottom to the top

Admire
-
the fresh herbs look incredible through the translucent rice paper
-
and once you taste the dipping sauce you will keep folding and folding just so that you can eat more sauce :)
