Antje's Veggie Bake
When I arrived in Hamburg last month, my mum surprised me with her version of a plant-based meal. She was not sure at all what to cook for me and decided to be safe: She only used veggies, oil, some vegetable/yeast stock, salt and pepper. And I was gobsmacked how such an easy and simple meal can be so delicious.
Here is my mum Antje's plant-based veggie bake recipe:
Ingredients
amounts for 2 servings:

2-4 yellow potatoes, best to use a waxy/firm variety like Nicola or Kipfler (for the Australians)

1 sweet potato (Kumara)

2-3 spring onions
-
2-3 shallots
-
3 carrots
-
2 handfuls of green beans

the amounts can vary as you prefer and according to your level of hunger...
I usually dont eat onions or shallots, but in this case they did no harm. Not sure if that is due to being baked?! They were delicious in this recipe!
Pre-heat your oven to 180 degrees celcius.

Ingredients for the "Sauce"

Antje used 1 heaped teaspoon of a very good vegetable/yeast stock by Vitam R and blended it with 1/4 cup of water

she then added 1/3 to1/2 cup of virgin olive oil, depending on the amounts of veggies

1/4 tea of freshly ground black pepper

a pinch of sea salt

Blend all this until well mixed

Peal and Chop Veggies
-
peal potatoes and carrots and chop in pieces
-
peal shallots and cut in half
-
clean spring onions and cut into 1 inch long pieces
-
clean the beans and chop the ends off
-
pour all veggies in a big lidded container, add the oil/stock mix and shake until well combined

place the veggies on 1 or 2 backing trays, depending on how much you use. Do not over crowd the tray.

place the tray in your pre-heated oven and bake for approximatedly 50-60 minutes.
Serve!

pour into bowls, add some more freshly ground black pepper and enjoy!
